Today, I’m working on my take of the viral TikTok lasagna soup using the trumpet pasta we found at Costco. If it turns out as good as I think it will, I’ll share the recipe soon.
I’m also making a double batch to freeze. To do this, I’ll pull 3 quarts out of the pot before adding any dairy and freeze it (don’t tighten the lids too much—jars can burst as the liquid expands!).
Speaking of which, I adore having an Instant Pot these days. When I got it five years ago, it sat in the garage collecting cobwebs and dust. But now? With a 6-month-old, it’s a godsend. The ability to prep dinner in the morning, sauté and simmer in the same pot without using an open flame (bye, anxiety!), and pressure cook for quick dinners when the day gets away from me—total game changer.
